Almond Cookie Sandwiches

Macarons are delicious.



Delicious, but hard to make. Trust me, I tried one time and it was a pretty spectacular failure. The cookies weren't structurally sound and melted when I added the cream. They were delicious but fell apart in your hands.


So when I wanted to use up some softened butter, heavy cream, and sliced almonds before my vacation, I decided to be inspired by macarons, but make something way easier:


Almond Cookie Sandwiches

Recipe makes 1 dozen cookies or six sandwiches

Cookies
3/4 c. Flour
1/2 c. Sugar
1/4 c. Brown sugar
1 Egg
2/3 c. Oil
1/2 c. Sliced almonds
1 t. Vanilla extract

Preheat oven to 375 F.



Mix the flour, sugars, and almonds together in a large bowl. Mix the egg, oil and vanilla together in a smaller bowl. Add the wet ingredients to the dry, and mix well.



Place balls of dough on a greased cookie sheet. Put in oven for 10-12 minutes, or until they start to get dry around the edges. While they're baking, make the filling.

Filling


2 c. Sugar
1/3 c. Heavy cream
1/4 c. Sliced almonds
5 T. Softened butter



Mix cream and butter together in large bowl. Add the sugar 1 cup at a time and mix well. Fold in the almonds, and add food coloring of your choice. I made mine purple!


When the cookies are done, remove them from the oven and let them cool. Then pair them up by size. Spread some filling on one cookies, and top with another. Voila - sandwich. You'll have extra filling. This is okay. Just eat it with a spoon or a spatula or your hands. Whatever.
